To keep up your New Year’s resolution of eating healthier, you need to be able to look down at your plate during every meal – at the healthy food in front of you – and think, “I want to eat that!”

You need to be able to look down at a simple chicken sandwich, one without a thick slice of cheese that is drowning in an unhealthy sauce, and get excited about eating it.

How can you transform a familiar piece of chicken breast with just one ingredient? One that not only provides additional flavor and health benefits, but also provides a wonderful dark, golden color that will once again have you thinking, “I want to eat that!”

Cooking up a honey-glazed chicken breast on the stove is quick and easy.  But to get just the right color and flavor, it is essential that the honey is added at the very end of the cooking process.

For one chicken breast, add a little olive oil to the pan, and season with salt and pepper.  Cook the chicken on medium fire, flipping it occasionally, and making sure not to press down on it, which will release the juices causing the chicken to dry and lose flavor.  Once the chicken is about cooked, drizzle honey on top, coating the chicken well.  Turn the fire up and flip the chicken, and coat the other side with honey too.  As the honey caramelizes, keep sliding (and flipping occasionally) the chicken around the pan to absorb all that dark, golden syrup.

Place the honey-glazed chicken on bread, add a couple slices of tomato and some lettuce, and pour the remaining syrup from the pan on top.  Before you even take a bite, you’ll be staring at your plate thinking, “This resolution is going to be a cinch”.

Sometimes, all it takes is one spice to bring some excitement back to your meals, and keep you eating healthy throughout the year.

Honey-Glazed Chicken Sandwich Recipe by Season with Spice

What you’ll need:
Boneless chicken breast, olive oil, salt and black pepper
1/2 tbsp honey per chicken breast
Pinch of Season with Spice's Smoked Serrano Chili Powder or Chipotle Powder for spicy version

Process:
1. Pour a little olive oil into a pan, and add in boneless chicken breast pieces. Season with salt, pepper and cayenne/ chipotle powder (if using). Cook on medium fire.
2. When chicken is just about done (should take about 7 minutes per side), drizzle honey on top of the chicken, flip it over, and turn the fire up. Add remaining honey to the other side of the chicken.
3. As the honey caramelizes, keep sliding (and flipping occasionally) the chicken around the pan to absorb all the syrup. You may need to add a little water if syrup becomes too thick. When the color of the chicken is a mix of golden and dark syrup, turn fire off and remove from pan.
4. Make a simple sandwich of honey-glazed chicken with tomato and lettuce. Use remaining honey syrup in pan as a sauce for the sandwich (if sauce is too thick to pour, add a little water and heat up again).

Notes:
- If you want more flavor, try adding a spicy honey mustard sauce to the sandwich
- You can skip the sandwich and add the honey-glazed chicken to a salad instead
