Straight from the garden to the grill. From fresh to charred to dipped into a yummy sumac yogurt dip. That’s how I’m finishing off my summer veggies this year.
With an abundance of eggplant, zucchini, summer squashes, banana peppers, tomatoes, red onions, and more, I’m slicing the garden veggies up, coating them lightly with olive oil, and tossing them on the fire to make a fun, healthy meal of Grilled Summer Vegetables with a Sumac Yogurt Dip.
With the vegetables roasting on the grill, stir together creamy yogurt with the punchy, tart spice of Sumac Berry Powder. Along with a drizzle of extra-virgin olive oil and some freshly minced garlic, you have an addicting Middle Eastern inspired dip for grilled vegetables…and maybe for a handful of potato chips while you’re waiting for the veggies to cook.
Once the vegetables are tender and nicely charred, pile them up on a big platter, and serve along with the sumac yogurt dip and thick slices of grilled flat bread.
Grilled Summer Vegetables with Sumac Yogurt Dip
by Season with Spice
Ingredients:
Your choice of vegetables - try eggplant, zucchini, yellow squash, red onion, and tomatoes
Flat bread
Sumac Yogurt Dip:
1 cup plain yogurt or Greek yogurt
2 garlic cloves
1/2 tsp of Season with Spice's sumac berry powder (and a bit more for sprinkling on top)
Tiny pinch of salt (optional)
Extra virgin olive oil
Method:
1. In a small bowl, mix together all the ingredients for the Sumac Yogurt Dip.
2. Slice the vegetables into thick discs and brush them with olive oil. Cook the vegetables over the grill until browned on both sides (if needed, brush with more oil as they cook). Grill flat bread when veggies are almost done. Serve both with the sumac yogurt dip.
