I've always used low sodium for everything, including this soup. I will keep about the same amount of spices. If your thyme has been on the shelf for more than 6 months, use a little more. For a richer taste, feel free to add more mushrooms (more flavorful choice of mushrooms also help) or caramelized onions. You can also add a splash of sherry, red wine, or marsala toward the end. Taste and adjust as you go. Today I forgot the cream and ended up making it with milk only - tasted just as good. I like to add red wine while I sauté the mushrooms, gives it a bit more flavor I think. It also made no difference to my palate if I used fresh or dried thyme. I used a hand-held blender to make the soup nice and smooth after removing the bay leaves.
