I made this for dinner today to pair with my roast beef sandwich. I was in the mood for a slaw but I wanted something different. It was good but I didn't get the same color that you did. I didn't have scallion, so I used scallion oil instead. Still tasty though!

Fermenting kimchi in a suitcase? Really? That guy must really, really like kimchi! :) I do like kimchi but Bobby isn't a fan. I think a lot has to do with the vinegar (something he likes only in salad dressings). I can see both of us loving this dish, but I would have to cut back some on the vinegar. I have the chili seasoning, but it looks like it's close to needed more. Made a dish with galangal and lemongrass powder last night - it was SO good!
