Great meal. I use teaspoons of minced garlic and
minced ginger in jars for quickness but found 2 chillies made it quite spicy -

We typically mix the cornstarch with the meat first as this method (influenced from the Chinese cooking) helps to seal in the juices of the meat. It also helps to thicken the sauce first so you can add in the seasoning last for stronger flavor:)

I did a very similar method, but mixed the lemongrass ginger seasoning in with the cornstarch. I will try your method and see if it has a more intense flavor. More flavor=good :)
