The reduction of sugar might have made your cookies slightly more crumbly, but a couple other issues to watch out for is over beating the batter and over baking. If they still turn out too crumbly for your taste, try adding in a bit more peanut butter or increase the recipe by half and add in another egg. <br /><br />You're probably right - the dough balls will be slightly less than 1 inch. I tend to form the cookie dough balls too large as well, so I have to redo them halfway through in order to get 48.
